The olives are hand-picked at their prime, washed, and crushed using modern equipment that limits the olives' contact with oxygen and does not generate heat. This process results in an olive oil with low acidity, allowing the smooth, buttery, green fruit flavors of the Picholine du Languedoc olive to shine through.
